  • Preheat your oven to 220°C (425° F).
  • Wash the sweet potatoes and pat them dry.
  • Peel the sweet potatoes, if desired.
  • Cut the sweet potatoes into 1/4-inch (6 mm) thick slices.
  • In a small bowl, mix together the salt, pepper, and garlic.
  • Place the sweet potato slices in a single layer on a baking sheet.
  • Drizzle the olive oil over the sweet potatoes and use a brush or your hands to evenly coat the slices.
  • Sprinkle the seasoning mixture over the sweet potatoes.
  • Bake for 15 minutes, then use a spatula to flip the slices over and bake for an additional 10-15 minutes, or until the sweet potatoes are tender and golden brown.
  • Remove from the oven and let cool for a few minutes before serving. Enjoy!
