There’s something about the aroma of grilled chicken souvlaki that feels like a summer evening on a Greek island — warm air, sea breeze, and that unmistakable scent of lemon and herbs. This recipe captures that feeling with simple ingredients and bold flavor. Marinated in olive oil, lemon, and herbs, the chicken turns juicy and golden on the grill, perfect to enjoy with tzatziki or on its own.

Ingredients
 

  • 900 g (2 lbs) boneless, skinless chicken thighs or breasts cut into 1-inch cubes (2.5cm)
  • 3 tbsp olive oil
  • 1 lemon juice and grated zest
  • 1 tsp oregano
  • 1 tsp rosemary
  • 1 tsp parsley
  • 1 tsp salt

Instructions
 

  • In a large bowl, whisk together olive oil, lemon juice, lemon zest, salt and spices.
  • Add the chicken cubes and mix until well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
  • If using wooden skewers, soak them in water for 30 minutes. Thread chicken cubes onto skewers.
  • Preheat pan to medium-high heat, or use a grill. Cook skewers for 8–10 minutes, turning occasionally, until browned and cooked through.
  • Serve the skewers hot with tzatziki or side dishes of your choice.

Notes

For a fully carnivore option, enjoy the chicken on its own or pair with grilled halloumi or feta cheese.
