Cut the sweet potatoes into 1/4-inch (6 mm) thick slices.
In a small bowl, mix together the salt, pepper, and garlic.
Place the sweet potato slices in a single layer on a baking sheet.
Drizzle the olive oil over the sweet potatoes and use a brush or your hands to evenly coat the slices.
Sprinkle the seasoning mixture over the sweet potatoes.
