Classic Ratatouille
Ingredients
- 3 tbsp olive oil_
- 1 onion
- 2 cloves garlic
- 1 aubergine
- 2 bell pepper
- 1 zucchini
- 3 tomatoes
- 1 tsp herbs de provence_
- salt_
- black pepper_
Instructions
- In a large skillet or Dutch oven, heat the olive oil over medium heat.
- Dice the onion and mince the garlic. Add them to the skillet and sauté until softened, about 5 minutes.
- Dice the aubergine, bell peppers, zucchini, and tomatoes. Add them to the skillet and cook until the vegetables are tender, about 15-20 minutes.
- Stir in the herbs and season with salt and pepper to taste.
