I newver imagined making something savory with oats, it just never crossed my mind. But then I came across Derbyshire Oatcakes which are somewhat like a cross between pancakes and tortilla wraps. But the traditional recipes incorporate wheat flour, so I never actually tried making them. I just started mixing my own oat flour tortilla dough which and experimented to get the consistency right. The ratio between water and flour needs to be just right to get a pliable dough which is soft enough to yield thin tortillas. While the oil in the dough is needed to make the dough less sticky, I just added enough to keep the dough from sticking. This recipe uses boiling hot water to help with binding and also this way the oat flour can absorb more water to then make the tortillas softer. Wholemeal oat flour has great nutritional value and contains a lot of nutrients. If you are gluten free, make sure to get certified gluten free oat flour. If you can’t find any oat flour in stores you can make your own by putting rolled oats into a blender or food processor and mix until it becomes flour.
