I never imagined making something savoury with oats, it just never crossed my mind. But then I came across Derbyshire Oatcakes which are somewhat like a cross between pancakes and tortilla wraps. But the traditional recipes incorporate wheat flour, so I never actually tried making them. I just started mixing my own oat flour tortilla dough which and experimented to get the consistency right. The ratio between water and flour needs to be just right to get a pliable dough which is soft enough to yield thin tortillas. While the oil in the dough is needed to make the dough less sticky, I just added enough to keep the dough from sticking. This recipe uses boiling hot water to help with binding and also this way the oat flour can absorb more water to then make the tortillas softer. Wholemeal oat flour has great nutritional value and contains a lot of nutrients. If you are gluten free, make sure to get certified gluten free oat flour. If you can’t find any oat flour in the shops you can make your own by putting rolled oats into a blender or food processor and mix until it becomes flour.
Oat Flour Tortillas
Ingredients
- 240 g (8.5 oz) oat flour_
- 300 ml (10.6 floz) boiling water
- 40 ml (2 ⅓ tbsp) oil_
- ¾ tsp salt_
Instructions
- Mix the flour and salt together, add the oil and boiling water, mix with a spoon.
- Then use a spatula to scrape the dough from the sides of the bowl and press against the rest of the dough, once cool enough form into a ball with your hands.
- Let the dough rest for about 5 minutes or longer.
- Divide the dough into 8 balls.
- Press the balls with a tortilla press, make sure to use two sheets of parchment paper.
- Heat up a pan and bake the tortillas on medium high heat.
- Flip the tortilla once its brown. Make sure not to burn them, if they are browning too quickly, turn down the heat a little.
- Store the baked tortillas in a tea towel to keep them warm.
- Serve with your favorite fillings.
